My favourite Irish bookshop is the Gutter Bookshop in Temple Bar, Dublin. It's only been open for a year but seems part of the cultural landscape already. Great books, knowledgeable and helpful staff, book clubs, reading groups, poetry nights, book launches, and the most interesting, provocative and readable 'Staff Picks' in the city. It's an independent bookshop; it's an Irish bookshop. It's where I buy all my books.
